Green's Cookie Sandwiches

If you have kids, or are a kid at heart, you will know there is no better combination than chocolate cookies, ice-cream and rainbow sprinkles. Now you can make Green's Cookie Sandwiches at home - creamy vanilla flavoured mousse frozen between two yummy chocolate cookies and rolled in 100's and 1000's.

Preparation Instructions

To make Green's Cookie Sandwiches:

  • pack of Green's Cookie Sandwiches
  • 3 tablespoons (60g) melted polyunsaturated margarine or butter
  • 1/3 cup (80mL) chilled whole milk
  • 1 egg
  • 2 lined baking trays

To Start

  1. PREHEAT gas or electric oven to 180OC/350OF (or 160OC for fan forced).
  2. PLACE chocolate cookie mix, 3 tablespoons (60g) polyunsaturated margarine or butter and 1 egg into a medium mixing bowl. Using a wooden spoon, mix ingredients until combined.
  3. ROLL 2 teaspoons of mixture into a ball and place onto prepared baking tray. Continue to produce 24 cookies. Flatten slightly with finger tips.
  4. BAKE for 10-12 minutes. Remove from oven and stand for 5 minutes prior to transferring onto a cooling wire

To prepare whipped filling

  1. EMPTY contents of vanilla filling sachet into a small mixing bowl with 1/3 cup (80mL) chilled whole milk. Using an electric mixer, mix on low speed until ingredients are combined. Mix for a further 4 minutes on medium speed, scraping sides of the bowl occasionally. Spoon the whipped filling
  2. POUR sachet of edible sprinkles into a small bowl and roll the outside of the 12 cookie sandwiches through the sprinkles.
  3. FREEZE Cookie Sandwiches for at least 30 minutes prior to serving. Allow Cookie Sandwiches to thaw slightly prior to serving.

Sugar, wheat flour, edible sprinkles [sugar, tapioca starch, glazing agent (903), colours (102, 110, 122, 123, 124, 133)], whipping agent [vegetable oil, glucose syrup solids (contains wheat), emulsifier (472), milk protein, sugar] whey powder (from milk), wheat starch, vegetable fats & oils [emulsifiers (471, 477), antioxidant (322)], cocoa powder (9%), soy flour, raising agents (450, sodium bicarbonate), thickener [(1442) (from maize)], gelling agent (gelatine), salt, vegetable gum (guar), emulsifier (481).

Contains wheat, milk and soy

May be present: egg, tree nuts and sesame seeds.

Gigantic Cookie Sandwich

  1. Prepare cookie dough as directed on pack. Divide dough into two equal portions. Roll each portion into a ball, place one ball on each baking tray and flatten slightly.
  2. Bake for 12-15 minutes.
  3. Prepare filling as directed on pack. Stir through edible sprinkles.
  4. Spoon filling onto the flat side of one of the baked cookies and place the other cookie, flat side down, on top.
  5. Freeze for at least 1 hour prior to serving. Use a sharp knife dipped in hot water to slice.
