Green's Gingerbread Man Cookie Kit

Christmas would not be complete without Gingerbread. Green's Gingerbread Man Cookies are so easy to make, that you can have them anytime you want. Green's Gingerbread Man are a light, soft textured cookie with white icing, chocolate buttons. Even the cookie cutter is included.

Preparation Instructions

To make Green's Gingerbread Man Cookies you will need:

  • 1 pack Green's Gingerbread Man Cookie Kit
  • 1 egg
  • 1 tablespoon (20mL) water
  • 3 tablespoons (60g) polyunsaturated margarine
  • 2 baking trays

PLUS for the icing...

  • 1 tablespoon (20mL) water

To Start

  1. PREHEAT over to 180°C/350°F (160°C fan forced) and lightly grease two baking trays.
  2. PLACE cookie mix, 1 egg, 1 tablespoon (20mL) water and 3 tablespoons (60g) polyunsaturated margarine in a mixing bowl, stir with a wooden spoon until combined, then mix with hands to create a smooth dough. Refrigerate for 30 minutes.
  3. ROLL dough on a lightly floured surface to a thickness of 8-10mm. Using the gingerbread man cutter, cut out shapes and place on baking trays.
  4. BAKE for 10-12 minutes. Remove from oven and stand for 2 minutes prior to transferring to a cooling rack. Allow to cool completely before icing.

To prepare icing

  1. PLACE content of icing sachet in a small bowl with 1 tablespoon (20mL) of water.
  2. MIX until combined, then for a further two minutes until smooth icing is formed.
  3. SPREAD or pipe icing on top of Gingerbread man and decorate with choc chips to form face and buttons.

Gingerbread Christmas Tree Decorations

  1. Prepare cookie dough as directed on pack.
  2. Using Gingerbread Man cutter as well as star and Christmas tree shaped cutters to cut out dough. Use a chopstick or pencil to make a hole at the top of each piece of dough for the string and bake as directed on pack.
  3. Once cookies have cooled, prepare icing as directed on pack and decorate the cookies.
  4. Cut lengths of thin ribbon or string and thread them through the hole in each cookie.
  5. Hang cookies on the Christmas tree.
