Preparation Instructions
To make Green's Pink Vanilla Cupcakes:
- 1 pack Green's Pink Vanilla Cupcakes
- 2 eggs
- 2/3 cup (150mL) milk
- 3 tablespoons (60g) soft polyunsaturated margarine or butter
- 12 cup muffin pan
Plus for frosting...
- 4 tablespoons (80g) soft polyunsaturated margarine or butter
To Start
- PREHEAT over to 180°C/350°F (160°C fan forced). Insert patty cases into the muffin pan.
- PLACE cake mix, 2 eggs, 3 tablespoons (60g) soft polyunsaturated margarine and 2/3 cup (150mL) milk in a large mixing bowl. Using an electric mixer, mix on low speed until ingredients are combined. Mix on medium speed for 2 minutes, scraping down the sides of the bowl occasionally. Divide batter evenly amongst 12 patty cases.
- BAKE for 20-25 minutes or until browned. Cupcakes are baked if they spring back when lightly touched in the centre. Stand cupcakes in pan for 5 minutes prior to inverting onto a cooling rack. Allow cupcakes to cool completely before frosting.
To prepare frosting
- EMPTY contents of frosting sachet into a small mixing bowl. Add 4 tablespoons (80g) soft polyunsaturated margarine. Using an electric mixer, mix on low speed until ingredients are combined. Mix on medium speed for 2 minutes, scraping down sides of bowl occasionally. Spread frosting over the top of each cupcake.

Raspberry Blush Cupcakes
- Prepare cupcake batter as directed on pack.
- Fold in 1 cup of frozen (unthawed) raspberries.
- Fill patty cases and bake cupcakes as directed on pack.
- Prepare pink frosting as directed on pack. Spread frosting on cupcakes once they have cooled completed.
- Place a whole fresh raspberry on top of each iced cupcake and dust with icing sugar.
