Preparation Instructions
To make Green's Vanilla Cupcakes:
- 1 pack Green's Vanilla Cupcakes
- 2 eggs
- 2/3 cup (150mL) milk
- 3 tablespoons (60g) soft polyunsaturated margarine or butter
- 12 cup muffin pan
Plus for frosting...
- 4 tablespoons (80g) soft polyunsaturated margarine or butter
To Start
- PREHEAT over to 180°C/350°F (160°C fan forced). Insert patty cases into the muffin pan.
- PLACE cake mix, 2 eggs, 3 tablespoons (60g) soft polyunsaturated margarine and 2/3 cup (150mL) milk in a large mixing bowl. Using an electric mixer, mix on low speed until ingredients are combined. Mix on medium speed for 2 minutes, scraping down the sides of the bowl occasionally. Divide batter evenly amongst 12 patty cases.
- BAKE for 20-25 minutes or until browned. Cupcakes are baked if they spring back when lightly touched in the centre. Stand cupcakes in pan for 5 minutes prior to inverting onto a cooling rack. Allow cupcakes to cool completely before frosting.
To prepare frosting
- EMPTY contents of frosting sachet into a small mixing bowl. Add 4 tablespoons (80g) soft polyunsaturated margarine. Using an electric mixer, mix on low speed until ingredients are combined. Mix on medium speed for 2 minutes, scraping down sides of bowl occasionally. Spread frosting over the top of each cupcake.

Here's another family favourite recipe using Green's Vanilla Cupcakes:
Butterfly Cakes
- Prepare cupcakes & frosting as directed on pack.
- Once cupcakes have cooled completely, take a sharp serrated knife and slice the top off each cupcake to form a round disc.
- Cut each disc in half to form a pair of 'wings'.
- Spread the vanilla frosting over the cut surface of each cupcake and position the 'wings' on top.
- Place a small dollop of jam between the wings and dust with icing sugar.
