Strawberry Frozen Cheesecake

1 packet (335g) Green’s Strawberry Shortbread Ice Dream™ Cake
2 tablespoons (40g) butter, melted
1 ¼ cups (300ml) cold milk
250g block cream cheese, softened and cubed
250g punnet strawberries, chopped
¼ cup strawberry topping / sauce
300ml thickened cream, whipped
Strawberries, to serve
1. Preheat oven to 180°C (160°C fan forced). Grease and line the base and sides of a 20cm round cake pan with baking paper.
2. In a large bowl, place milk and Chocolate Chunk Ice Dream™ mix. Using an electric mixer, mix on low speed until ingredients are combined, then increase to high and mix for 3 minutes. Fold in peanut butter until mixed through.
3. In a large bowl, place milk and Strawberry Ice Dream™ mix. Using an electric mixer, mix on low speed until ingredients are combined, then increase to high and mix for 3 minutes. Slowly beat in the cream cheese, one piece at a time, until mixed in and smooth.
4. Fold in chopped strawberries and then just mix through the topping so you can still see swirls of it in the mix. Spoon mix onto cooled cookie base. Place into the freezer for 4 hours or overnight until set. Remove from the freezer. Top with whipped cream and strawberries and serve.
Add ¼ cup white chocolate chips to the base when making mix for a funny chocolate addition.
If slice has defrosted on serving, either return to the freezer or alternatively for a softer set, keep in the fridge.
